Hello Everyone,

Tuesday is my daughter's birthday and I wanted to make something for her that she loves for a treat.  One of those things is brownies, but I felt like I wanted to make them extra special... so I dipped them in chocolate and topped them with a mini cookie!  Would you like to see how I did it??

It was really simple.  I used a box brownie mix which required 1/4 cup water, 1/2 cup oil, and one egg.  The chocolate I like to use for dipping is CandiQuik (found at Target) and then I used Mini Chips Ahoy.  You can use any mini cookie or top with crushed nuts, mints, chips.... whatever you like.

This is the pan that I used.  It is from the Pampered Chef and I LOVE it!!

The brownies come out just beautifully! You don't even have to dip them if you don't want.

But I did!  Just follow the instructions on the CandiQuik package and then dip your brownies, covering them in chocolate.

Then grab your mini cookies and... 

While still wet, press the cookie into the brownie and let cool and dry on a wire rack.  I placed the cookie on right after I dipped each one.  I also placed parchment paper under the rack in case any chocolate dripped.

And VOILA... a special little treat!!! 

What about using peppermint as a topping for minty brownies for the holiday season??
